Egg Cilantro Sandwich Recipe





     Ingredients:

· 4 large eggs

· 2 tablespoons mayonnaise

· 1 tablespoon Dijon mustard

· 1/4 cup fresh cilantro, chopped

· 1/4 small red onion, finely chopped

· 1 small jalapeño, seeded and finely chopped (optional for heat)

· 1/2 avocado, sliced

· Salt and pepper to taste

· 4 slices of whole-grain or sourdough bread (toasted)

· Lettuce leaves (optional, for added crunch)


 

      Instructions:

 

     Boil the Eggs:

Place the eggs in a pot and cover them with water. Bring to a boil, then reduce the heat and simmer for 9-12 minutes, depending on your preferred level of doneness.

Once cooked, drain the hot water and transfer the eggs to a bowl of ice water. Let them cool for a few minutes before peeling.

 

Prepare the Egg Mixture:

 

Peel the boiled eggs and chop them into small pieces.

In a medium bowl, combine the chopped eggs, mayonnaise, Dijon mustard, chopped cilantro, red onion, and jalapeño (if using). Mix until well combined. Season with salt and pepper to taste.


   Assemble the Sandwich:

 

Place lettuce leaves on two slices of toasted bread.

Spoon the egg-cilantro mixture onto the lettuce, spreading it evenly.

Top with slices of avocado.

Place the remaining slices of toasted bread on top to complete the sandwiches.

 

Serve:

 

Cut the sandwiches in half and serve immediately.
