Mocha Magic Muffins Recipe

  Ingredients:

For the Muffins:

· 1 1/2 cups all-purpose flour (or whole wheat flour)

· 1/2 cup cocoa powder (unsweetened)

· 1 cup granulated sugar (or coconut sugar for a healthier option)

· 1 teaspoon baking powder

· 1/2 teaspoon baking soda

· 1/4 teaspoon salt

· 1/2 cup strong brewed coffee (cooled)

· 1/2 cup plain Greek yogurt or sour cream

· 1/4 cup vegetable oil or melted coconut oil

· 2 large eggs

· 1 teaspoon vanilla extract

· 1/2 cup chocolate chips or chunks (optional)

     For the Mocha Glaze (optional):

· 1/2 cup powdered sugar

· 2 tablespoons brewed coffee

· 1 tablespoon cocoa powder

       Instructions:


 

Preheat the Oven:

 

Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly with oil.

 

Mix the Dry Ingredients:

In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.

 

Prepare the Wet Ingredients:

 

In another bowl, mix the brewed coffee, Greek yogurt (or sour cream), vegetable oil, eggs, and vanilla extract until smooth.


 

Combine the Ingredients:

 

Pour the wet ingredients into the dry ingredients. Stir until just combined—do not overmix.
