Shish Taouk Recipe Shish Taouk  is characterized by its tangy, garlicky, and spiced marinade, which typically includes yogurt, lemon juice, garlic, and a blend of Middle Eastern spices such as paprika, cumin, and turmeric. This marinade not only imparts a rich flavor to the chicken but also makes it incredibly tender and juicy. Shish Taouk is traditionally served with garlic sauce, pita bread, and a variety of sides like tabouli, hummus, or grilled vegetables. It's a staple in Middle Eastern cuisine, often enjoyed in casual settings like family gatherings and street food markets, as well as in more formal dining environments.

Ingredients:

· 1.5 pounds (about 700 grams) chicken breast, cut into 1-inch cubes

· 1/4 cup plain Greek yogurt

· 3 tablespoons lemon juice

· 3 tablespoons olive oil

· 4 garlic cloves, minced

· 1 teaspoon paprika

· 1 teaspoon ground cumin

· 1 teaspoon ground coriander

· 1/2 teaspoon ground turmeric

· 1/2 teaspoon ground cinnamon

· 1/2 teaspoon ground black pepper

· 1 teaspoon salt

· 2 tablespoons tomato paste

· 2 tablespoons white vinegar

· Wooden or metal skewers (if using wooden skewers, soak them in water for 30 minutes before use)


         Instructions:

           Marinate the Chicken:

o In a large bowl, mix together the Greek yogurt, lemon juice, olive oil, minced garlic, paprika, cumin, coriander, turmeric, cinnamon, black pepper, salt, tomato paste, and vinegar until well combined.

o Add the chicken cubes to the marinade, ensuring they are evenly coated. Cover and refrigerate for at least 2 hours, or preferably overnight, to allow the flavors to penetrate the meat.

 

Prepare the Skewers:

Thread the marinated chicken pieces onto the skewers, leaving a small space between each piece for even cooking.


 

Grill the Chicken:

Preheat your grill or grill pan to medium-high heat.

Place the skewers on the grill and cook for 10-12 minutes, turning occasionally, until the chicken is cooked through and slightly charred on the edges.

The internal temperature of the chicken should reach 165°F (75°C).

Serve:

Serve the Shish Taouk hot, with a side of garlic sauce (toum), pita bread, and a fresh salad, such as tabouli or fattoush.

· Marination Time: For best results, marinate the chicken overnight. This allows the flavors to fully develop and makes the chicken more tender.

· Cooking Method: If you don't have a grill, you can cook the chicken skewers in the oven. Place them on a baking sheet and bake at 400°F (200°C) for about 20 minutes, turning halfway through.

· Serving Suggestion: Shish Taouk pairs well with a side of hummus, grilled vegetables, or a light yogurt sauce to balance the spices.
