Fattoush

 


   Ingredients:

· 4-6 pita breads, cut into bite-sized pieces

· 2 cups mixed greens (lettuce, parsley, mint)

· 1 cup diced cucumber

· 1 cup cherry tomatoes, halved

· 1 cup diced red onion

· 1/2 cup crumbled feta cheese (optional)

· 1/4 cup chopped fresh parsley

· 2 tablespoons olive oil

· 2 tablespoons lemon juice

· 1 teaspoon sumac (or paprika)

· Salt and pepper to taste


 Instructions:

1. Preheat Oven: Preheat your oven to 400°F (200°C).

2. Toast the Pita: Toss pita pieces with 1 tablespoon olive oil and toast in the oven for 5-7 minutes, or until crispy.

3. Prepare the Salad: In a large bowl, combine mixed greens, cucumber, tomatoes, onion, and feta cheese (if using).

4. Make the Dressing: In a small bowl, whisk together lemon juice, sumac, salt, and pepper.

5. Dress the Salad: Drizzle the dressing over the salad and toss to combine.

6. Add Pita and Parsley: Add toasted pita pieces and chopped parsley to the salad and toss gently.

7. Serve: Serve immediately.

· Add More Vegetables: Include radishes or bell peppers for added crunch and flavor.

· Crispier Pita: For an extra crispy pita, let them cool completely before adding them to the salad.
