The recipe evolved, incorporating various meats, vegetables, and other ingredients, but cheese remains the core element of a quesadilla. Quesadilla Recipe (serves 4-6)
Ingredients:
· 8-10 corn tortillas (or flour tortillas)
· 2 cups shredded cheese (Monterey Jack, Cheddar, or blend)
· 1/2 cup chopped onion
· 1/2 cup chopped bell pepper
· 1/2 cup chopped cooked chicken (or beef, beans, or veggies)
· 1 jalapeño pepper, diced
· 2 cloves garlic, minced
· 1 teaspoon cumin
· 1/2 teaspoon paprika
· Salt and pepper, to taste
· 2 tablespoons olive oil
· Optional fillings: diced tomatoes, mushrooms, zucchini, salsa
Instructions:
1. Preheat a large skillet or griddle over medium heat.
· Prepare fillings:
· · Sauté onion, bell pepper, and jalapeño until softened.
· Add cooked chicken, garlic, cumin, and paprika. Stir well.

Assemble quesadillas:
· · Place a tortilla in the skillet.
· Sprinkle shredded cheese on half of the tortilla.
· Add filling mixture on top of cheese.
· Fold tortilla in half.
· Cook quesadillas:
· · Cook for 2-3 minutes or until the tortilla is lightly browned.
· Flip and cook for another 2-3 minutes or until the cheese is melted and tortilla is crispy.
Repeat with remaining tortillas and filling.
Cut quesadillas into wedges.
Serve hot with:

· Sour cream
· Sliced avocado
· Chopped cilantro
Variations:
· Veggie quesadillas: replace chicken with sautéed veggies.
· Bean and cheese quesadillas: use black beans, pinto beans, or refried beans.
