Grilled Halloumi and Herbed Cypriot Rice

                                                    



Halloumi is a firm, brined cheese originating from Cyprus, popular for its high melting point, which makes it ideal for grilling. When paired with herb-infused rice, this dish becomes a delicious and fragrant meal with Mediterranean flavors.

                                 

Ingredients:

· For the Halloumi:

8 oz (225g) halloumi cheese, sliced

1 tbsp olive oil

· For the Herbed Rice:

1 cup basmati or long-grain rice

2 cups vegetable broth

1 tbsp olive oil

1 small onion, finely chopped

2 garlic cloves, minced

1/4 cup fresh parsley, chopped

1/4 cup fresh mint, chopped

1/4 cup fresh dill, chopped

Zest and juice of 1 lemon

Salt and pepper to taste

 

                                                  

        Instructions:

1. Cook the Rice:

Rinse rice until the water runs clear. In a medium pot, heat 1 tbsp olive oil over medium heat. Sauté the onion until softened, then add garlic and cook until fragrant.

Add the rice, stir for a minute, then add vegetable broth. Bring to a boil, cover, and reduce to a simmer. Cook for 15-18 minutes or until the liquid is absorbed.


2. Grill the Halloumi:

While the rice cooks, heat a grill pan over medium heat. Brush halloumi slices with olive oil and grill for 1-2 minutes on each side until golden.

3. Combine and Serve:

Once the rice is done, fluff it with a fork. Stir in lemon juice, zest, parsley, mint, and dill, and season with salt and pepper.

Serve grilled halloumi on top of the herbed rice, garnished with extra herbs.
