Strawberry Pudding Recipe

                                   


Ingredients:

· 2 cups fresh strawberries, hulled and chopped

· 1/2 cup sugar (adjust to taste)

· 1/4 cup cornstarch

· 2 cups whole milk or almond milk (for a dairy-free option)

· 1/2 teaspoon vanilla extract

· Whipped cream or mint leaves (optional, for garnish)

Prepare Strawberry Puree

1. In a blender or food processor, puree 1 cup of sliced strawberries with 2 tablespoons of sugar until smooth.

2. Strain the puree through a fine-mesh sieve to remove seeds.


Step 2: Make Pudding

1. In a medium saucepan, whisk together milk, sugar, cornstarch, and salt.

2. Cook over medium heat, stirring constantly, until mixture thickens and comes to a boil (5-7 minutes).

3. Remove from heat and stir in melted butter, vanilla extract, and strawberry puree.

4. Let cool slightly.

Step 3: Add Fresh Strawberries

1. Fold in remaining 1 cup of sliced strawberries.

2. If using strawberry jam or preserves, stir in at this stage.

Step 4: Chill Pudding

1. Pour pudding into individual serving cups or a large serving dish.

2. Cover with plastic wrap, pressing wrap directly onto pudding surface.

3. Refrigerate for at least 2 hours or overnight.


Top with Whipped Cream (optional)

1. Beat heavy cream and granulated sugar until stiff peaks form.

2. Top chilled pudding with whipped cream and additional sliced strawberries, if desired.
