Baked Chicken with Pineapple

                                                                         


Ingredients

· 4 chicken breasts or thighs (boneless, skinless)

· 1 cup fresh or canned pineapple chunks

· 1/2 cup pineapple juice

· 1/4 cup soy sauce

· 2 tablespoons honey or brown sugar

· 2 cloves garlic (minced)

· 1 teaspoon grated ginger

· 1 tablespoon olive oil

· 1/2 teaspoon chili flakes (optional, for heat)

· Salt and pepper to taste

· 1 tablespoon cornstarch (optional, for thickening sauce)

· Garnish: chopped parsley or cilantro


         

                                               


Instructions

1. Preheat Oven: Set the oven to 375°F (190°C).

2. Prepare Marinade: In a bowl, mix pineapple juice, soy sauce, honey, minced garlic, ginger, olive oil, chili flakes, salt, and pepper.

3. Marinate Chicken: Place chicken in a baking dish and pour the marinade over it. Add the pineapple chunks. Let it sit for 20–30 minutes if you have time.

4. Bake: Cover the dish with foil and bake for 25 minutes. Remove the foil and bake for another 10–15 minutes until the chicken is golden and fully cooked (internal temperature: 165°F/75°C).

5. Optional Sauce Thickening: Remove the chicken from the dish and transfer the liquid to a saucepan. Mix cornstarch with a little water, stir it into the liquid, and simmer until thickened. Pour back over the chicken.

6. Garnish and Serve: Sprinkle with parsley or cilantro and serve over rice, quinoa, or steamed veggies.
