Carrot Cake Recipe

  Ingredients:

· 2 cups all-purpose flour

· 2 tsp baking powder

· 1.5 tsp baking soda

· 1 tsp ground cinnamon

· 1/2 tsp nutmeg (optional)

· 1/2 tsp salt

· 1 cup granulated sugar

· 1 cup brown sugar

· 4 large eggs

· 3/4 cup vegetable oil

· 1/2 cup unsweetened applesauce

· 3 cups grated carrots

· 1 cup chopped walnuts or pecans (optional)

· 1 cup raisins (optional)

For Cream Cheese Frosting:

· 8 oz cream cheese (softened)

· 1/2 cup unsalted butter (softened)

· 2 cups powdered sugar

· 1 tsp vanilla extract

    Instructions:

1. Preheat and Prepare: Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans.

2. Dry Ingredients: In a bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

3. Wet Ingredients: In another bowl, beat eggs, granulated sugar, and brown sugar until smooth. Gradually add oil and applesauce.

4. Combine and Fold: Slowly mix the dry ingredients into the wet mixture. Fold in grated carrots, nuts, and raisins (if using).

5. Bake: Divide the batter evenly between the cake pans and bake for 30–35 minutes. Cool completely before frosting.

6. Frosting: Beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla extract. Frost the cooled cake layers and decorate with extra nuts or shredded coconut if desired.

Cultural Background and Origin

Carrot cake's origins trace back to medieval Europe, where sugar and sweeteners were scarce. Carrots, being naturally sweet, were used in desserts. The modern carrot cake, as we know it, gained popularity in Britain during World War II, when rationing made traditional ingredients like sugar and eggs scarce. It later found global fame, particularly in the United States, where cream cheese frosting became a standard topping.

Bonus Tips

1. Toast the nuts before adding them for enhanced flavor.

2. Use freshly grated carrots for maximum moisture.

3. To make it healthier, substitute half the flour with whole wheat flour and reduce sugar by 25%.

4. Add a hint of orange zest for a citrusy twist.
